I have always believed that making cookies is the antidote to almost anything that ails you (although it was better in the days before fear of foodborne illness, when you could help yourself to that dollop of cookie dough). I have never before seen a three ingredient cookie recipe, and will look forward to giving this one a try!

P.S. Good luck with the interview thing. Hopefully they're putting you through the wringer for a good reason!

Thanks so much for your comment (and encouragement), Ann.

And this recipe really is delicious and so UNCOMPLICATED, too. To make it even easier (by avoiding the messy step of measuring peanut butter, and ending up with nothing to wash but your mixing bowl): Empty one small jar (18 oz) of PB in a bowl. Then (almost) fill the jar with sugar, and dump that in, too. Add 2 eggs. Mix. Drop. Bake. Done! :)

I've never seen this recipe. It's like some perfect Zen thing. I wonder if you could make it with brown sugar. I think I'll try it. Actually, when the Rocky Road romance gets to a stage where Harry is forced to cook one-man, one-dish meals, this would be great. Perhaps you could lend it to him.

Isn't it lovely? Yes, we must tell Harry about the no-measuring-cup variation I discovered as well. It disrupts the 1+1+1, triune beauty somewhat, but has a certain bacheloresque quality which appeals. Let me know how brown sugar works. Most standard PB cookie recipes split the difference.

I hadn't thought of that. A man who doesn't cook won't have a measuring cup. What a clever twist! I have an old and truly wonderful recipe for coconut-oatmeal cookies that's half white/half brown sugar. It also calls for shortening--not butter. It's great.
